Abstract

Cilj ovog rada je razviti kalibracijski model kojim će se, iz spektralnog odziva ATR FTIR-a, odrediti koncentracija etanola i šećera za uzorke piva. Provedeni su eksperimenti pri čemu su pripremljeni uzorci različitih volumnih udjela etanola i masenih koncentracija šećera s vodom. Dobiveni spektri služe za izradu kalibracijskog modela. Pri izradi kalibracijskih modela, provela se predobrada podataka, razvoj modela i ocjena valjanosti dobivenih modela. Rezultati ovog rada primijenit će se za kontinuirano mjerenje koncentracije šećera i etanola, primjenom procesne analitičke tehnologije i spektroskopskih metoda, tijekom proizvodnje i ispitivanja kvalitete piva.

Abstract (english)

The aim of this work is to develop a calibration model that can be used to determine the ethanol and sugar concentration of beer samples from the spectral response of ATR FTIR. Experiments were carried out in which samples were prepared with different amounts of ethanol and different amounts of sugar and water. The spectra obtained are used to develop a calibration model. During the development of the calibration models, the data was pre-processed, the model was developed and validated. The results are used for the continuous measurement of sugar and ethanol concentrations using process analytical technology and spectroscopic methods in beer production and quality testing.
