Abstract

Enzimi ili biološki katalizatori su tvari koje ubrzavaju biokemijske procese u živim organizmima. Lipaza je enzim široko rasprostranjen u prirodi i u mnogim životinjskim vrstama, biljkama, bakterijama, kvascima i gljivicama. Lipaza katalizira hidrolizu i sintezu estera formiranih iz glicerola i dugolančanih masnih kiselina. Thermomyces lanuginosus spada u skupinu gljiva. Enzimi koje ona proizvodi razgrađuju škrob i spadaju u termički najstabilnije enzime dobivene iz gljiva. U ovome radu opisane su metode koje se koriste za pročišćavanje enzima lipaze porijeklom iz Thermomyces lanuginosus kao i praktična primjena enzima lipaze. Metode koje se koriste pri pročišćavanju enzima lipaze porijeklom iz Thermomyces lanuginosus najčešće uključuju procese kromatografije i ekstrakcije.

Abstract (english)

Enzymes or biological catalysts are substances that accelerate biochemical processes in living organisms. Lipase is an enzyme widely found in nature and in many animal species, plants, bacteria, yeast, and fungi. Lipase catalyzes the hydrolysis and synthesis of esters formed from glycerol and long-chain fatty acids. Thermomyces lanuginosus belongs in the group of fungi. The enzymes it produces break down the starch and produce the most thermally stable enzymes obtained from the fungus. This work describes the methods used to purify enzyme lipase from Thermomyces lanuginosus and the practical application of lipase in daily life. Methods used for the purification of enzyme lipase from Thermomyces lanuginosus most commonly include chromatographic and extraction processes.
